Smoked Salmon Fried Rice

Ingredients

  • 2 cups cooked rice
  • 2 oz smoked salmon, cut into bite-sized pieces
  • 2 large eggs, beaten
  • 1 tbsp soy sauce (or to taste)
  • ½ tsp white pepper
  • 1 tbsp oil
  • ½ cup chopped vegetables (optional: peas, corn, carrots)
  • Garnish: chopped green onions

Directions

  1. Turn on Sauté-Then-Simmer® (STS) mode. Add oil to the inner pot.
  2. When hot, pour in the beaten eggs and stir until just set. Push to one side of the pot.
  3.  Add smoked salmon and stir-fry for 30–40 seconds until fragrant.
  4. Add cooked rice and vegetables. Stir to break up clumps.
  5. Add soy sauce and white pepper; mix well to coat the rice evenly.
  6. Switch to Keep Warm, garnish with green onions.
