Seafood Porridge

Ingredients

  • 1 cup jasmine rice (rinsed)
  • 8 cups water or seafood broth
  • 1 lb frozen mixed seafood (shrimp, squid, mussels, etc.)
  • 2 slices ginger
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • Salt and pepper, to taste
  • 2 green onions, chopped (for garnish)

Directions

  1. Add rinsed rice, water (or broth), and ginger slices into the rice cooker. Close the lid and select the Porridge function.

  2. When the rice cooker timer shows about 20 minutes remaining, open the lid and add the frozen mixed seafood directly into the pot. Stir lightly and close the lid.

  3. When the cycle completes, open the lid and stir in soy sauce, sesame oil, salt, and pepper.

  4. Ladle the porridge into bowls and top with chopped green onions. Serve warm and enjoy!
