Ingredients

  • 10 Oreos cookies
  • 2 tbsp unsalted butter, melted
  • 1 ¼ cups shredded kataifi
  • 1 ½ tbsp unsalted butter
  • 3 tbsp pistachio cream
  • Pinch of salt
  • 10 oz cream cheese, room temperature
  • 3 tbsp sugar
  • ⅛ tsp salt
  • 3 tbsp pistachio cream
  • ½ cup heavy whipping cream, chilled
  • ⅓ cup heavy cream
  • 80 g dark chocolate

Directions

  1. Crush cookies into fine crumbs, mix with melted butter, and press firmly into the bottom of a greased 6-inch cake pan.
  2. In the AMC-130 grill pan, toast kataifi with butter until golden. Mix with pistachio cream and a pinch of salt, then spread over the cookie crust.
  3. In the AMC-130 stainless steel pot, create a water bath and melt chocolate with heavy cream. Pour half over the kataifi layer.
  4. Beat cream cheese, sugar, salt, and pistachio cream until smooth. Whip heavy cream to soft peaks, fold in, then pour filling over the chocolate layer and smooth the top.
  5. Pour the remaining chocolate ganache over the cheesecake layer.
  6. Refrigerate at least 6 hours or overnight.
  7. Garnish with pistachios or kataifi before serving.
