Dill Pickle Pasta Salad

Ingredients

  • 2 cups dry macaroni
  • 1 cup dill pickles, chopped
  • 1 cup carrot, cubed
  • ½ cup pickle juice
  • ½ cup mayonnaise
  • ½ cup sour cream (or Greek yogurt)
  • 2 tbsp fresh dill, chopped
  • Salt & black pepper, to taste

Directions

  1. Add pasta and enough water to cover into the rice cooker pot. Close lid and press Cook, and let it boil for about 8 minutes until the pasta is tender. Once done, drain and rinse pasta under cold water. Return pasta to the pot.
  2. In a small bowl, whisk together mayonnaise, sour cream, pickle juice, salt, and pepper.
  3. Add chopped dill pickles and fresh dill to the pasta. Pour in the dressing and toss until evenly coated.
  4. Refrigerate for at least 30 minutes before serving for the best flavor.
