Chinese Steamed Eggs

Ingredients

  • 1 cup uncooked short-grain rice
  • 1¼ cups water (for cooking rice)
  • 3 large eggs
  • ¾ cup hot water (1.5x egg volume)
  • ¼ tsp salt
  • Optional: chopped scallions, soy sauce, or sesame oil for serving

Directions

  1. In a bowl, whisk together eggs, ¾ cup hot water, and salt until smooth.
  2. Strain the egg mixture and pour it into a heat-safe container that fits into the steam tray.
  3. Rinse rice and add it to the rice cooker with 1¼ cups water.
  4. Place the container in the steam tray and place the steam tray over the rice and close the lid.
  5. Press the Cook button. When the cooker switches to Keep Warm, let it sit for 5–10 minutes to finish cooking.
  6. Carefully remove the steam tray, fluff the rice, and serve both with desired toppings.
